Ethiopia is coffee's original home, and its heirloom varieties make some of the most aromatic cups you will taste. The famous regions are all here: Yirgacheffe, Sidamo, Guji and Harrar, in both washed (clean, floral, almost tea-like) and natural (fruity, a little wine-like) processing. Every lot is specialty grade and traceable.
Washed Ethiopians are delicate and floral, think jasmine, lemon and bergamot. Naturals go the other way: bold and fruit-forward, with blueberry and strawberry. Both are bright and complex, and neither is bitter.
Ethiopian is made for V60 and pour over in Saudi Arabia, where the brightness and florals really come through. Lighter espresso lots make a lively, fruity shot too. If you want a smoother, chocolatey contrast, reach for a Brazilian coffee instead.
