Hand-picked Heirloom cherries from Guji’s fertile red soil are sorted twice, then sealed in stainless tanks for controlled anaerobic fermentation. Oxygen-free conditions amplify esters and intensify fruit aromatics while maintaining floral clarity. After 72 hours, cherries dry on raised beds for 18–20 days. A light-medium roast preserves guava, passionfruit, and strawberry notes, layered over cocoa nib undertones and a velvety mouthfeel.
