All four come from the same plant (Camellia sinensis) — the difference is processing. White tea is the least processed: young leaves dried with minimal oxidation, delicate and floral. Green tea is unoxidised but heat-treated to lock in fresh, vegetal flavours. Oolong is partially oxidised (between 8-85%) producing a wide flavour spectrum from floral to roasted. Black tea is fully oxidised, producing the strongest, maltiest flavours and highest caffeine. Herbal teas (chamomile, peppermint, rooibos) are technically not tea — they're infusions of other plants and contain no Camellia sinensis.

Use 1 teaspoon (about 2-3g) of loose leaf per 200ml cup. Water temperature is critical: green and white tea at 70-85°C, oolong at 85-90°C, black tea and chai at 95-100°C, herbal infusions at 100°C. Steep time matters too: green tea 2-3 minutes, black tea 3-5 minutes, oolong 3-5 minutes, herbal infusions 5-10 minutes. Always cover while steeping to keep aromatic compounds in the cup. Use a fine mesh infuser or proper teapot strainer to remove leaves cleanly. Many premium loose leaf teas can be re-steeped 2-3 times — each infusion reveals different flavour notes.

Loose leaf tea stays fresh for 12-18 months when stored properly (airtight container, cool dark place, away from strong odours). Matcha is more time-sensitive: ceremonial grade should be consumed within 2-3 months of opening. Tea bags and sachets generally have 12-24 month shelf life.
