Ceremonial grade comes from the youngest first-harvest leaves and is stone-ground into a fine, bright-green powder. It tastes naturally sweet, so it is smooth enough to whisk with just water. Culinary grade uses later-harvest leaves, so it is bolder and a little bitter. That is what you want when the matcha has to stand up to milk, sugar or heat, which makes it better for lattes, iced matcha, smoothies and baking. Where matcha is grown changes how it tastes. Uji, near Kyoto, is known for a sweet, rounded umami. Nishio and Kagoshima tend to be brighter and more vegetal. Sift about 2g of matcha so it does not clump. Add a splash of water at 70 to 80C (boiling water scorches it) and whisk hard until it froths, then pour over milk and plenty of ice. New to it? Heat, light and humidity are what spoil matcha, and Jeddah has all three. Keep the tin sealed and out of the light, refrigerate it once open, and let it reach room temperature before opening so the humid air does not condense inside. Buy a 30 to 40g tin you will finish in a few weeks rather than stockpiling.
