Carmo Fazenda Isidro Pereira is a Yellow Bourbon from the Carmo de Minas region of Brazil, grown at around 1,200 metres and naturally processed to build sweetness and body. It is roasted by The Espresso Lab as an espresso profile: rich, rounded and forgiving.

In the cup you get coconut and lime over a base of almond and chocolate, with a smooth, syrupy body. It makes a classic straight espresso and holds its own in milk, and it also brews well as a comforting French press or moka pot.

02Tamp evenly, then extract 36g of liquid in 25-30 seconds.

02Heat 320ml water to 93°C.
03Bloom the grounds with 40ml water for 30 seconds, then slowly pour the remaining water in concentric circles.
04Finish your brew in 3 minutes to unlock those bright coconut and lime notes.

02Add to your French press, then pour in 400ml water at 95°C.
03Steep for 4 minutes, allowing the rich flavours to develop, then plunge slowly.
