Hand-picked cherries ripen slowly under shade canopies, then are partly dried with mucilage intact to deepen sweetness and body. This sustainable approach highlights the farm’s biodiversity and commitment to specialty standards.

Medina Espejo charms with juicy tropical mango and pineapple notes, bright red-berry acidity and smooth honey sweetness. Subtle floral aromas of hibiscus and lavender complement a rich cocoa-nib finish, creating a multi-dimensional flavor profile adored by coffee connoisseurs. Direct trade relationships ensure farmers receive premium pricing, empowering local communities and elevating Colombian coffee excellence.

Filter / Pour-Over Recommendation:
Use 16 g of coffee to 260 g of water at 93 °C in a Kalita Wave. Bloom for 30 seconds, then pour steadily over 3 minutes to accentuate bright fruit notes and silky texture.

Espresso Recipe:
Dose 17 g, yield 35 g in 25 seconds at 9 bar. Expect a dynamic interplay of tropical sweetness, vibrant acidity and a smooth, chocolatey finish—ideal for espresso-based beverages.
