Hand-picked cherries ripen slowly under shade canopies, then are partly dried with mucilage intact to deepen sweetness and body. Medina Espejo charms with juicy tropical mango and pineapple notes, bright red-berry acidity and smooth honey sweetness. Subtle floral aromas of hibiscus and lavender complement a rich cocoa-nib finish, creating a multi-dimensional flavor profile adored by coffee connoisseurs. Filter / Pour-Over Recommendation:
Use 16 g of coffee to 260 g of water at 93 °C in a Kalita Wave. Bloom for 30 seconds, then pour steadily over 3 minutes to accentuate bright fruit notes and silky texture.
