Bom Jardim
From the heart of Brazil’s Cerrado Mineiro region—at elevations between 900–1,100 m—Leandro Gomes cultivates the Bom Jardim micro-lot on his family-owned farm. Well-drained clay-limestone soils and a tropical climate create perfect conditions for Yellow Topazio varietals. Harvested at peak ripeness, cherries undergo a natural dry process on raised patios, concentrating sugars and deepening body in each bean.
In the cup, Bom Jardim delivers luscious notes of ripe red cherry and wild strawberry woven with creamy milk chocolate and toasted pecan. A gentle melon-like acidity balances its velvety mouthfeel, while hints of brown sugar and soft spice add depth. Fragrant aromas of cocoa nibs and almond blossom entice coffee enthusiasts, and sustainable water-conservation practices ensure environmental stewardship and consistent specialty quality.
Filter / Pour-Over Recommendation:
Use 20 g of coffee to 320 g of water at 93 °C in a Chemex. Bloom for 45 seconds, then pour in four even stages over 4 minutes to accentuate syrupy sweetness and fruit-chocolate interplay.
Espresso Recipe:
Dose 18 g, yield 36 g in 26 seconds at 9 bar. Expect a thick crema and pronounced nut-chocolate character—perfect for cappuccinos or signature espresso drinks.
