Details
Smallholders around Mathioya deliver hand-picked cherries to Gondo Factory, where they are pulped, then soaked in clean water for 48 hours, washed, and soaked again for 48–72 hours. This extended wet fermentation minimises over-ripe flavours and lets varietal character shine. Slow drying on raised beds locks in citrus zest, stone-fruit nectar, and crystalline sweetness, producing a cup that is clean, juicy, and unmistakably Kenyan.
