Cultivated in nutrient-rich ash soils and cooled by Pacific breezes, these Bourbon and Pacas cherries develop dense sugars despite Finca Miramar’s modest altitude. After a brief mechanical pre-dry, whole cherries rest on raised beds for even moisture loss, locking in juicy berry notes and a cocoa-butter mouthfeel. A light-medium espresso roast balances acidity with caramelised sweetness, delivering thick crema and a lingering red-fruit finish.
