A carefully controlled 62-hour fermentation with specific yeast strains develops distinctive character, followed by a cold wash at 5°C to preserve those qualities. Gentle drying over 76 hours at 40°C maintains the beans' integrity before final stabilization. The result is a coffee with intentional depth and complexity.
