Buku Sayisa is a certified organic coffee from the Shakiso, West Guji region of Ethiopia. Grown at altitudes between 2,200–2,300 MASL, this Grade 1 heirloom varietal benefits from Ethiopia’s rich volcanic soil and cool highland climate, which allow the cherries to develop their distinctively vibrant and complex flavors.
What makes Buku Sayisa exceptional is not just its cup quality but its traceability and sustainability. Each lot is tracked from cherry to drying bed, offering full transparency and ensuring farmers are recognized for their work. Certified organic coffees remain rare in Ethiopia, making this offering especially unique.
To bring out the clean, fruit-forward profile of Buku Sayisa, here are our recommended recipes:
Bloom with 40g of water for 40 seconds. Continue pouring in gentle spirals until 270g is reached. Total brew time: ~3 minutes. Expect clarity, floral aromatics, and juicy stone fruit sweetness.
Bloom with 60g for 45 seconds. Add remaining water in slow, steady pours. Total brew time: 4:30–5 minutes. The Chemex accentuates the coffee’s clean finish and layered citrus-fruit balance.
Pull a balanced shot that highlights sweetness and acidity. Look for juicy peach, orange brightness, and delicate floral top notes with a clean aftertaste.
