The coffee beans are selected from high-altitude Colombian farms and decaffeinated using the clean, flavor-retaining **Sugarcane Ethyl Acetate (E.A.) Process**. This results in a decaf cup that is exceptionally sweet, clean, and full-flavored, defined by notes of **caramel**, **milk chocolate**, and **brown sugar**, with virtually no bitterness.
The Sugarcane Decaf Process
Unlike chemical-based processes that can strip flavor, the Sugarcane E.A. process uses Ethyl Acetate—a natural compound derived from fermented sugarcane—to selectively remove caffeine.
**Steaming:** The green beans are steamed to open their pores.
**E.A. Rinse:** The beans are rinsed repeatedly with the E.A. solution, which bonds to and removes $97\%$ or more of the caffeine.
**Final Rinse:** The E.A. is removed with a final steaming and washing, leaving the natural sugars and flavor compounds largely intact.
This gentle method is responsible for the coffee's retained sweetness and clean finish, proving that specialty decaf can taste just as good as its caffeinated counterpart.
