The Sugarcane Decaf Process

Unlike chemical-based processes that can strip flavor, the Sugarcane E.A. process uses Ethyl Acetate—a natural compound derived from fermented sugarcane—to selectively remove caffeine.

1. **Steaming:** The green beans are steamed to open their pores.
2. **E.A. Rinse:** The beans are rinsed repeatedly with the E.A. solution, which bonds to and removes $97\%$ or more of the caffeine.
3. **Final Rinse:** The E.A. is removed with a final steaming and washing, leaving the natural sugars and flavor compounds largely intact.

This gentle method is responsible for the coffee's retained sweetness and clean finish, proving that specialty decaf can taste just as good as its caffeinated counterpart.

**How to Brew (Drip Bag):**

• Tear open the top and hang the bag over your cup (the paper wings hold it in place).
• Pour a small amount of hot water ($94^{\circ}\text{C}$) to saturate the grounds (bloom).
• Wait 30 seconds, then slowly pour the rest of the water in two or three stages until the cup is full ($200 \text{ml} - 250 \text{ml}$).
