Origin & Farm Details: This decaf blend is grown in Colombia at approximately 1660 meters altitude, using the Castillo and Caturra varietals. The water used for decaffeination comes from a natural spring near Manizales, ensuring a clean and high-quality process. Processing includes sundrying, followed by a mechanical finish to prepare for roasting.

Espresso Brew Guide — Step-by-Step

  1. Grind to a fine espresso consistency (similar to powdered sugar with slight grain).
  2. Dose ~17g into portafilter; distribute evenly and tamp with firm pressure (~30-40N).
  3. Flush group head to stabilise temperature; insert portafilter.
  4. Pre-infuse for 2-3 seconds at low pressure to wet the puck.
  5. Pull shot aiming for ~36-37g yield in ~25 seconds.
  6. Taste: if sour → finer grind / slight longer brew; if dull or bitter → coarser or reduce time.

Filter Brew Guide — Step-by-Step

  1. Grind medium (texture similar to coarse sea salt).
  2. Heat water to ~93-94°C. Pre-rinse filter & preheat brewer and server.
  3. Use ~20g coffee to 300g water (approx 1:15); start timer at first pour.
  4. Bloom with ~60g water, let sit for 30-45 seconds.
  5. Pour in stages: slowly from center outward, then finish pour, reaching total water around 300g by ~2:45 min.
  6. Allow drawdown; remove filter and serve immediately.

Decaf beans are more delicate, so use filtered water and grind fresh. Store in a cool, dark place. Adjust extraction gently—small changes in grind or time can have larger effect due to less caffeine masking flavor.
