The Valdes family of Caldas, Colombia, has been cultivating coffee for four generations, a legacy beautifully represented by their brand, Café Cuatro Generaciones. Overseen today by Luis Jose Valdes, their farms—Parana, La Cristalina, and San Pablo—are highly technified, housing a total of 421,000 trees. The family's commitment extends beyond coffee production to environmental preservation and biodiversity support. At their ecological mill, coffee pulp is transformed into organic fertilizer, nurturing the very trees that provide shade and habitat for diverse bird species. They even cultivate endangered black cedar trees on their own nursery.
This exquisite blend from La Cristalina and San Pablo showcases the artistry of Natural processing. After harvest, cherries are meticulously sorted to eliminate defects. They are then fermented in the open air for 24 hours at controlled temperatures (14-16 °C). Following fermentation, the cherries undergo a drying phase of 20-25 days in a mechanical dryer, maintained between 30-35 °C. A final quality check ensures only the finest beans proceed to milling and packaging, promising a cup rich in character and history.
